This month sees Baja Fresh Mexican Grill join the plant-based revolution. Tapping Impossible Foods, the fast-casual Mexican food chain, has debuted a trio of new menu selections. The new dishes are as follows:
- Impossible Taco Combo – three tacos with grilled corn tortillas filled with Impossible meat, shredded lettuce, pico de gallo, guacamole, Baja salsa, and cotija cheese. Served with a side of black or pinto beans and Baja rice, $11.99 or $4.99 a la carte
- Fuego Impossible Burrito – jack cheese, guacamole, black beans, Impossible meat made, Diablo salsa, Six Chiles salsa, pico de gallo, pickled jalapenos, shredded lettuce and sour cream, $11.99
- Impossible Bowl – Baja rice topped with roasted veggies, Impossible, sour cream, avocado, pico de gallo and tortilla strips, $11.99
